Ginger

Ginger, a classic combination with chocolate. We use young ginger because it is more aromatic and less hot. We buy fresh young ginger in the summer, when it is in season, and dry it and powder it as well as crystallizing it. The ginger powder is blended with home made rice cream and our own chocolate to make a ginger ganache and then we stir in the chopped crystallized ginger.
