One of the joys of a visit to Turkey, Greece or the Middle East is sitting at a cafe sipping an Arabic coffee. We wanted to re-create that in a chocolate. To do this we make a coffee and cardamom flavoured chocolate by grind coffee beans and cardamom with the cocoa. The resultant chocolate is then blended with a homemade rice cream to create a ganache to fill the 65% chocolate shells.
