For a chocolate that’s equal parts sweet and crunchy, with just a little hint of smokiness to it, our maple walnut praline ticks all the boxes. For these, we heat granulated sugar and 20 grams of maple syrup into a caramel, then stir chopped walnuts into the caramel until coated. After leaving them to harden, we blitz the caramelised walnuts into a fine paste and blend it with 65% dark chocolate.
